Ingredients

For these Funfetti Granola Bars, you will need the following ingredients.

  • instant or old-fashion oats (use gluten-free if needed) – I used half instant and half old-fashioned because that is just what I had on hand.
  • crispy rice cereal – using crispy rice cereal in these granola bars makes them not so dense, so I wouldn’t skip this ingredient. You can use any brand you prefer.
  • peanut butter – you can also use almond or seed butter in this recipe. I prefer making this recipe with a natural style of peanut butter (the kind that has oil on top) that is made of only peanuts and salt. Some traditional styles of peanut butter have added sugars, which can make these granola bars too sweet.
  • agave nectar – you can also use maple syrup, brown rice syrup or honey in this recipe.
  • coconut oil
  • vanilla extract
  • mini chocolate chips and dye-free sprinkles (scroll down for more add-in options) – I love to use these dye-free sprinkles.

How to make this recipe

This recipe is beyond simple to make and Parker, who’s 5, pretty much made the entire thing for me:)

  1. Line a muffin tin with 12 silicone liners or line a 8×8 baking dish with parchment paper.
  2. In a medium bowl, add in the oats and crispy rice cereal.
  3. In a microwave-safe bowl or measuring cup, add in the peanut butter, coconut oil and agave syrup. Heat for 1 minute, stir and then heat for an additional 45 seconds. Add in the vanilla extract. Let sit for 2-3 minutes.
  4. Pour the peanut butter syrup into the oats and stir.
  5. Gently fold in the chocolate chips and sprinkles.
  6. Spoon the granola mixture evenly into the silicone liners. Using your fingers or another silicone liner, press the mixture down as hard as you can.
  7. Place the muffin tin in the refrigerator for at least an hour to chill.

Cooking with Kids

Toddlers and young kids (ages 2-6) can help by:

  • Placing the silicone muffin liners into the muffin tray.
  • Pouring and stirring all of the ingredients together. I would recommend that an adult uses the microwave and pour the heated peanut butter sweetener into the bowl as that bowl can get hot.
  • Help measure all of the ingredients. I am sure they can measure out all of the ingredients by themselves but since half of the ingredients are super sticky and sometimes hard to spoon out of the containers, this might get messy.. but I will leave that one up to you;)
  • Using a large mixing bowl will help prevent spills while toddlers are stirring.
  • Stirring in the add-ins.
  • Spooning the mixture into the baking dish and help press down the granola mixture. You will definitely have to help them actually press down the mixture but having them try to help with the pressing makes them work on their fine motor skills.

Kids (ages 6 and up) can help by:

  • Placing the silicone muffin liners into the muffin tray.
  • Measuring all of the ingredients, pour into bowls and stir the ingredients together. An adult may need to supervise the microwave process.
  • Stir in the add-ins. They will sneak a couple of chocolate chips as they mix, but that is part of the fun.
  • Spoon the mixture into the liners, press down and place the tray in the fridge.

Feel free to mix and match your add-ins depending on what you have in your pantry or what your family prefers.

You will need 1/2 cup total of add-ins for this recipe.

  1. craisins + white chocolate chips
  2. chocolate chips + shredded coconut
  3. dried cherries + almond slivers
  4. raisins + 1/2 tsp cinnamon
  5. chopped dried pineapple and mango + shredded coconut
  6. dye-free m&ms + chopped peanuts
  7. chopped freeze-dried strawberries + yogurt chips
  8. mini marshmallows + mini chocolate chips

Notes

Storage: Store in air-tight container in the fridge for up to 7 days.
Oats: I prefer this recipe using instant oats, but you can also use old-fashion oats if you prefer. I used a mixture of half instant and half old-fashion oats in this recipe as that is all I had on hand.
