Beet, Blackberry + Apple Baby Food Puree

This vibrant puree is loaded with antioxidants, fiber, calcium and manganese. Which I know you love to hear about but I’m pretty sure you would rather hear me tell you that if you add a little honey, this puree would make an amazing toddler and adult popsicle!!

Other ways to enjoy this purees- 

  • Swirl in some greek yogurt for an extra creamy dessert puree.
  • Is great over cooked oats for a bright breakfast bowl. Puree for baby or serve with a sprinkle of chia seeds and touch of honey for toddler.
  • Like I suggested above – add some honey or sugar and freeze for an amazing toddler popsicle.

For this puree we add sharp red beets, juicy blackberries, a chunk of sweet crisp apple together all rocked out with a healthy amount of mint.

Ingredients 

  • 1 red beet, peeled and roughly chopped
  • 1 cup blackberries
  • 1/2 apple, peeled, cored and roughly chopped
  • 4 mint leaves

Instructions 

Instructions using Beaba's Babycook Pro.

  • Fill one basket with the beets, apple and blackberries, in that order. Using the measuring bowl, fill the correlating heating tank to a level 3 with water.
  • Lock bowl in place and turn babycook on.
  • Run steam cycle.
  • Keep the cooking juices and transfer the contents of the beet basket into the blender, add the mint and pulse in 3 second bursts until you reach your desired consistency.

Instructions for Regular Cook Method

  • In a medium saucepan, bring 2" of water to a boil over medium heat. Place the beets, apple, and blackberries into a steamer basket over boiling water, cover, and cook for 15 minutes. Reserve steamer water. Let cool slightly.
  • Transfer the beets, apple and blackberries to a blender or food processor, add the mint and puree in short bursts until you reach your desired consistency, adding reserved steamer water in 1/4 cup increments if needed.

Age: 6+ months
Yield: 12 ounces
Storage: Fridge – store in an airtight container in the fridge for 3-4 days. Freezer – can be frozen for up to 4 months (this and this are my favorite freezer storage containers).
