This homemade Vanilla Almond Butter is addictive and will be an instant hit in your kitchen! Your kids (and you) will want to put it on everything! It’s sugar free and loaded with healthy fats. The perfect protein packed snack to have on hand, and you won’t believe how easy it is to make!

Here is what you are going to need on your counter to make this recipe –

Ingredients for Almond + Vanilla Butter
Food processor
Glass of Pinot Grigio
Freshly baked loaf of bread
Toddler spoon

Of course the third item down is the most important, duh!

You will also need a counter stool so that your toddler can push you out of the way while holding the biggest spoon you have in the kitchen so that they can eat away at this almond butter like it is the best thing they have ever eaten in-their-entire-lives, all while giving you the – ‘thanks mom for holding out on me for over 3 years on this amazingness’ look!

They will be elbow deep into this almond butter. It’s going to get messy!

You see, for years the thought of making almond butter scared and overwhelmed me – the process of turning a nut into a butter was beyond my culinary experience!

Turns out, I was just being a wimp. A big ol’ W-I-M-P!! Turning a nut, any nut, into a butter is one of the easiest things you can do in the kitchen. If you got a food processor or even a good blender. You are set up for success.

As it goes, the hardest part about making this almond + vanilla butter is having enough self control to stop eating it.

Trust me when I say, you and your toddler will want this almond butter on evvvverrrrrrrrrrrything!

There are 5 simple ingredients in this almond + vanilla butter – almonds (I used roasted and unsalted), coconut oil, sea salt, maple syrup and of course vanilla extract.

While it is totally acceptable to just pour in a bunch of almonds into your food processor and make amazing almond butter, it’s almost as easy to add the extra ingredients to have extra amazing almond butter!

Before you start counting your ingredient list on your store bought almond butter – I know my recipe has more ingredients. Like 3 or even 4 more then a store bought brand! Scandalous, I know!! Before you all abandon me on this, let me go over these ingredients with you so I can explain my theory of why you need these 5 ingredients in order to achieve the most amazing almond butter you have ever had –

almonds – I like to use roasted almonds for a deeper flavor, always unsalted. If you can’t find roasted unsalted you can use raw almonds as well.
coconut oil – this oil will help the almonds stay together and not have that annoying nut paste on the bottom and oil on the top situation that drives me crazy.
sea salt – I used Himalayan Salt in mine for extra minerals, but a pinch of salt will make this so you can keep it in your cupboard or fridge for over a month (not like it will last that long).
maple syrup – this is optional, but highly recommend. Just a small amount of sweetness to offset the salty/nutty flavor really pushes this almond butter into a whole new level.
vanilla extract – this is clearly the winner in the recipe! Vanilla takes the plain almond butter you are used to eating into a culinary addiction that will leave you craving more.

Let get this nut party started!

You dump the nuts into the food processor and prepare yourself for the loudest noise of your life, and turn the machine on – I find pulsing at the beginning helps keep the noise down. Then you just let it run…

and run…

and run..

This is where the glass of wine comes in. Take a sip and relax, this is going to take awhile.

After roughly 5-7 minutes, your almonds will almost look like almond butter, it’s just a fake. You now add the remaining 4 ingredients and turn the food processor on for another 5-10 minutes.

This will be painful!

Pour yourself another glass of wine and sip.

Once the almonds look like liquid gold, you are good-to-go! Grab that spoon and dig in, your mind is about to be blown. This almond butter will be warm and smooth and a perfect snack after that glass of wine you just finished (enter – loaf of bread). Just be prepared for your toddler to push you out of the way so they can get their own almond butter game on!

Ways to enjoy this almond butter – 

  • layer this almond butter with fig jam on a piece of whole grain bread for a gourmet pb&j
  • drizzle over ‘fancy’ apple slices (apples with lemon juice) for a quick summertime snack
  • eat straight off of the spoon
  • toss a spoonful of almond butter, a handful of pretzels and a few chocolate chips onto freshly popped popcorn for a wonderful late night snack
  • spread on top of a graham cracker then sprinkle with coconut flakes and chopped raisins for a fun snack

Ingredients 

  • 2 cups almonds raw or roasted
  • 2 tsp maple syrup
  • 1 tbsp coconut oil
  • 1/4 tsp sea salt
  • 2 tsp vanilla bean extract

Instructions 

  • Place the almonds into a food processor or blender.
  • Pulse for the first 10 seconds and then leave running on normal speed for 5-7 minutes or until the almonds are starting to look like almond butter.
  • Add the remaining ingredients into the food processor and puree for an additional 5-7 minutes.
  • The almond butter should be smoothy and shiny.
