32 Healthy Toddler Lunch and Dinner Ideas
Let's just call this post what it really is - What the Kiddos Ate for October, November and December! 3 months all wrapped up into 1 pretty post, yourwelcomeverymuch! Someone is slacking off on these posts 🙋🏻🙋🏻🙋🏻 There are 2 (not-so-good) reasons why... 1) since October, my family has been having a blast playing this game I like to call - 'tag you're it, now prepare to die'. Not dramatic at all over here! All you have to do to play this game is have one person in the family get sick and then just take turns passing it around to each other. You get double points if you pass it around twice! We started with the stomach bug (two rounds each = double points), then came the cold (single points) and now we are onto croup (single points). Which if your little one has ever had croup, then you know that thing is bat-shit-crazy! I have spent waaaaayyyyyyy too much time outside in my pjs at 3am with a coughing toddler then I can even comprehend right now. 2) I decided to workout. I went to ...
Easy Homemade Chicken Stock (great to use in Baby Purees)
A super Easy Homemade Chicken Stock recipe that is a perfect additional to add to all of your homemade baby purees. It's so easy and good that you will also want to use it for all of your favorite winter meals - soup, stew, chili and even risotto is better with homemade stock!! Easy Homemade Chicken Stock I wish it was Flashy Recipe Friday in the house today, but instead I am giving you Basic Recipe Friday and bringing you this Easy Homemade Chicken Stock recipe. About time.. right?!? Recipe after recipe, I have given you chicken stock as an option to add to any of the 80+ puree recipes on this site but have failed to give you an actual recipe for the stock. Super rude of me, I know. This might be because 1) I think dealing with chicken bones is pretty icky and am not a huge fan 2) I am lazy like that 3) I just call my mom when I need some chicken stock. Yes, I still call my mom to make me food. I also leave her house with a bag full of ...
Chicken Chili Verde
Made with chicken, corn, beans and a tomatillo salsa verde, this easy and healthy Chicken Chili Verde is a perfect family meal for any night of the week! This soup came to fruition when I was being queen of the lazy. Despite most people's opinion, I don't always like spending hours upon hours cooking in the kitchen. Yes, I love to cook.Yes, I love to make delicious and healthy food.Yes, I like to drink wine while I cook. But spending hours in the kitchen, not always my jam. We can co-queen this lazy cooking thing together if you want. Because I know you have nights/weeks/months when you don't want to spend countless hours in the kitchen as well, that's why we are such good friends. This soup was made with 3 things in mind 1) how can I make a delicious meal for Christmas lunch without spending more then 20 minutes on it? 2) how can I make a soup that Parker will actually eat because she firmly believes soupy soup is for pouring onto the table to play in? 3) how ...
1 Lunch + 2 Snacks #119
LUNCH - Roasted Veggie & Feta Pizza We love roasted veggies and often have them at dinner. Since a lot of the pizzas that we make use up leftovers as toppings, a roasted vegetable pizza seemed like the next logical step. Roasted veggies and feta make a perfect duo in my mind, but I have to admit I made two versions of this pizza for lunch. One with cheddar & roasted veggies (my back up) and the one you see here with feta (just in case the kids rejected the feta version). The feta version was gone first! I love it when the kids surprise me, it just motivates me, that much more, to keep trying new things. Even the smallest of food victories is worth celebrating:) Using roasted veggies, leftover from dinner, made pulling this lunch together fast and easy. I used 1 whole wheat flatbread per person, topped it with 2 or 3 tablespoons of classic tomato sauce, the leftover roasted vegetables (some I left as is, some I chopped up smaller) and then crumbled on the feta cheese. I cooked ...
Harvest Chicken Salad
This healthy Harvest Chicken Salad is full of cubed chicken, apples, pecans and dried cranberries, all tossed with a yogurt and mustard dressing. Easy for you to make and easy for your toddler (and you) to devour! Lately, it seems like I have a knack for posting recipes that are really just a big ol' bowl of yummy chicken for you to droll over (exhibit A). And while, I guess I could roll this in a tortilla along with some spinach and call it 'Kids Harvest Chicken Wrap for School Lunch', my thinking is that you would rather have some recipes at your disposal that are flexible enough to morph with what you got going on in your life. Recipes you can use for your toddlers lunch, your lunch, a quick dinner, on bread, over greens, rolled into a wrap, and on and on and on. Easy recipes that you can make once (and hopefully in double batch form) and have around all week to create several different meals from. If this is also your thing, as I know it will be since we ...
Healthy Spinach + Artichoke Pizza
This healthy Spinach + Artichoke Pizza is a perfect family meal - full of iron rich spinach, antioxidant loaded artichokes, and vibrant cherry tomatoes, this pizza is loaded with nutrients. But don't worry, it has just enough cheese that the kiddos won't even notice all of the super healthy ingredients!! I am just going to have to do this to you, and I know it's not fair buuuuuttttttttt I am going to post a recipe for this mouth-watering pizza on a Monday! But before you hate on me, let me explain. I am just setting this up so you can have all week to run to the store to get these ingredients for Friday Night Pizza Night! And who is going to tell you that you can't make this pizza on a Tuesday or Wednesday night. No one here! Never! In my mind, when you top a whole wheat crust with gobs of spinach, artichokes, tomatoes and just a little cheese, you can serve this healthy pizza to your toddler (or yourself) all week long. And because this recipe makes enough spinach spread for an ...
Cheesy Slow Cooker Salsa Chicken
This Cheesy Slow Cooker Salsa Chicken is a flavorful way to spice up your family's weekday dinner. This recipe is super easy and calls for a simple ingredient salsa, chicken and of course some cheese, all tossed together and cooked while you are at work or wrangling the kiddos. The hardest part, is deciding how to eat it. Don't worry, I included some of my favorites down below. Well hello there big ol' pile of shredded chicken. I probably should have jazzed you up with the perfect sprinkle of cheese or cilantro on top, but this chicken isn't fussy. It doesn't want to play those pinterest worthy games. The only game this chicken wants to play is how can it get into your mouth in the fastest way possible. And in as many ways as possible. It wants to be devoured by you and your little ones. It's goals are that simple. Is it weird that I am talking about a chicken dish like it actually has goals and feelings??? Yup. Okay then, let's switch it around. The only goal I have in life ...
