Plus, they’re easy to make ahead and reheat for busy weeknights.

If your house is anything like mine, pizza is a go-to on busy weeknights. Whether it’s bagel pizzas, pizza roll-ups, or pizza muffins — my kids are always on board for pizza night.

Which is exactly why I thank my lucky stars for these English muffin pizzas. These adorable mini pizzas give everyone exactly what they want — no compromises needed.

#mymomhack: I updated this recipe to use the air fryer because if we’re making a quick dinner, we’re going all in. It cuts the cooking time by a few minutes and saves you from using the oven and cleaning a baking sheet — all wins in my book.

To the Kitchen, we Go –>

  1. Place cut English muffins on a baking sheet and toast for 4 minutes. This helps the English muffins from becoming soggy.
  2. Top with any sauce you prefer – here we are topping them with a hidden veggie pizza sauce. Sprinkle with cheese and then add any toppings your kids like.
  3. Bake for 6-8 minutes or until golden brown and bubbly.
  4. Here’s a pic of my kid’s plate – let cool and serve.

Ingredients 

  • 3 English muffins, sliced in half
  • 1/2 cup pizza sauce, homemade, store-bought, pesto, etc.
  • 1 cup shredded cheese, mozzarella or Italian Blend
  • 1/2 cup toppings of choice, see below
  • 2 tbsp grated parmesan

Instructions 

Oven Instructions

  • Prep: preheat oven to 450° F. Line a baking sheet with parchment paper for easier cleanup.
  • Toast English Muffins: add the sliced English muffins to the baking sheet. For a crispier crust, place the English muffins in the oven for 3-4 minutes.
  • Spread Sauce: spread the toasted English muffins with the sauce of your choice.
  • Add the Cheese: Next, sprinkle on your cheese, avoiding clumps.
  • Toppings: Scatter the toppings evenly on top of the cheese. Sprinkle with a pinch of parmesan.
  • Bake: Place the English muffin pizzas into the oven and bake for 6-8 minutes or until golden brown and the cheese is bubbling.
  • Done: Serve warm or set aside to come down to room temp for freezing.

Air Fryer Instructions

  • Toast English Muffins: for a crispier crust, add the sliced English muffins to the air fryer and bake for 2-3 minutes at 400℉ (my air fryer runs hot so I set my temp to 375℉).
  • Top Pizzas: spread the toasted English muffins with your sauce choice, sprinkle on cheese, and top with desired toppings.
  • Bake: Place the English muffin pizzas back into the air fryer and bake for 4-5 minutes or until golden brown and the cheese is melted and bubbling.

How to Store and Freeze
You can store cooked English Muffin Pizzas in the fridge for up to 5 days or freezer for 2 months. Make sure to let them come down to room temperature before storing them in an airtight container or freezer bag.
To reheat, simply pop them into the microwave for 30-second intervals until warm. Or place them on a baking sheet and warm them in a preheated 350-degree F oven for 5-7 minutes.
Picky-Eater Tip: If you’ve got picky eaters, try setting up a pizza serving station where kids can choose the toppings and create their own pizza. Or because kids love to be creative and eat food that looks like something familiar – encourage them to use toppings to decorate their pizza with a smiley face, different shapes or letters, veggie rainbows, you name it!
