The Holiday season is approaching fast but before I let my little one dive head first into platters of pie, cookies, candy and anything and everything sugar related, I need to fill her up with some healthy veggies. This months meal plan for toddlers is loaded from top to bottom with healthy meals that are not only chock-full of colorful vegetables but are also toddler tested and approved. Now you can sit back, relax and have a sweet treat for yourself 🙂

Vegetable Frittata – This dish is filled with tomatoes, red pepper and spinach and of course topped with delicious melted cheese. An egg dish that is great for breakfast, lunch or dinner.

Green Apple Pie Smoothie – With the word ‘pie’ in the name, you are not going to have any problems getting your little one to drink this spinach (1 whole cup!!!), tofu and green apple smoothie! Plus, you won’t even mind when they ask for seconds.

Quick Beef and Barley Soup – Toddlers love comfort food and this warm filling meal is no exception. Want to get crA-zy and bulk this recipe up with even more vegetables? Then go right ahead and add some peas, corn and kale, if you dare. Serve with a side salad and a bold red wine for the adults in the house.

Whole Wheat Pumpkin Waffles – Yes, pumpkin is a vegetable that I am fully committed to eating at any meal. These healthy whole wheat waffles are a must for a cold weekend morning. Make a couple batches and save for the busy week ahead.

Banana Zucchini Chocolate Chip Muffins – You have a WIN when you sprinkle any healthy vegetable muffin with mini chocolate chips. From personal experience, I would recommend that you make these tasty muffins in mini form, so that you don’t end up eating them all in one go.

Caprese [Mozzarella Tomato Basil] Panini – Let’s face it, a panini is just a fancy version of a grilled cheese where you get to trick your kids into putting vegetables and other yummy ingredients between two slices of warm and toasted bread. This panini is one on my favorites and would be even more amazing if you add some left over grilled chicken in.
