This week is my birthday week… but I am thinking I am going to just skip my birthday this year and celebrate the same birthday next year. That cool with everyone?

Couple things I want to talk about before I go on and on about this minty green smoothie (yes, there is also chocolate in it) but first, I have some BIG things happening this spring and right now I am just working the long hours behind the scenes to make them happen for you guys. Even though they aren’t yet happening right here on the blog yet, they are coming….

Book #2 – Whole Food Baby is in production as we speak and should be out in bookstores in June of this year. Whole Food Baby will be available in all english speaking countries and with translations happing after that. So Canada, Austria, England – you asked for it and now you got it! Way more details to come!

Meal Planning App – Another thing you all have been asking for, meal plans for your baby and toddler. Well, I do listen and it’s happening. I am partnering with the most amazing women ever (total role model of mine) and we are creating an amazing app for you. It has over 100 of my recipes on there, but that isn’t all, there are a ton of other family oriented bloggers on there as well. So you get all of my recipes plus a ton more all at your desposal. Plus, there are like a zillion other cool features that I will talk about at length with the app launches in April. It is totally a game changer for me (and hopefully for you as well)!

Okay, next up…

Book #3 – Wait what??? Yup, book #3 is happening right now. Because every time I swear I will never ever ever write another book, 3 months later I decide I should totally write another book. I feel like writing a book is a lot like childbirth, you (almost) completely forget about the pain once you have your little baby. Anyway, Little Bento is going to be the most amazing school lunch cookbook ever! Filled with so many fun lunch ideas, tips and tricks I have learned and recipes that work for your kiddo and as well as for you, cuz we all need to eat. Little Bento is coming to bookstores in August.

So, while it may be a little slower around here then usual, don’t worry I am busy writing and making things happen for you day and night. Come April, I will be back in full swing with a ton of new recipes for you and your little one.

Even though it is my non-birthday week, I still get to have 2 things – cake for breakfast (with a big cup of steaming hot coffee) and this Green Mint Chocolate Smoothie for lunch. Sugar for breakfast and spinach for lunch, it all balances out right?!

I know that the girls will get beyond super excited (like jumping up and down excited, which watching Parker ‘jump’ up and down is the best reward ever since she can’t actually jump but she still thinks she is jumping) to make this smoothie, I mean it has chocolate in it, so I know they will be so happy to help me celebrate my non-birthday with me.

Cake for breakfast, on the other hand, is just for me:)

This smoothie is creamy, minty and refreshing with just a little sweetness from the chocolate chunks. It is filled with amazing whole foods such as a banana, spinach, chia seeds, almond milk and of course a little mint and few pieces of chocolate.

It is a perfect smoothie for an afternoon snack, a quick on-the-go lunch (or breakfast) or even as an after workout protein boost.

Warning – this recipe makes 2 portions of smoothie, so if you have smoothie hogs like my girls, you will need to double the recipe or you will end up getting precisely 1/4 cup of smoothie for yourself. Nothing like one swig of this delicious smoothie to make you feel special on your birthday!

This Green Mint Chocolate Smoothie is filled with healthy whole foods such as a banana, spinach, chia seeds and spiced up with a little mint and a few chocolate chunks. Makes for a perfect afternoon snack for the kids or a beyond yummy on-the-go breakfast!

Ingredients 

  • 1 ripe banana
  • 2 cups spinach firmly packed
  • 1 cup almond milk
  • 1/4 tsp peppermint extract or three mint leaves
  • 1 tbsp chia seeds
  • 1 scoop vanilla protein powder or 1 additional banana (see notes)
  • 2-3 cups ice
  • 2 tbsp dark chocolate chips or carob chips

Instructions 

  • Place the banana, spinach, almond milk, mint, chia seeds, protein powder or additional banana and ice in a blender and run at high speed for 60-90 seconds.
  • Add in chocolate chips, pulse until they are in small pieces.
  • Serve and enjoy.

Notes

Protein Powder/Banana: this smoothie needs to be thickened up a little bit so I usually go with a scoop of protein powder, but you can also add an additional banana to the recipe. If using an extra banana, I would also recommend using 1 tablespoon of honey to sweeten it up.
Protein Powder Recommendation: I love this brand of protein powder because it is organic, soy free, dairy free and non-gmo but it also tastes great and my girls love it. I usually don't add protein powder into their smoothies but every once in awhile it a good thing to add in for a little extra protein, especially if we haven't been eating the healthiest that week. You can start introducing protein powder into kid's smoothies around 18-24 months of age.
