Whip up these quick ground chicken tacos in just 15 minutes for a delicious, family-friendly dinner. Made with seasoned ground chicken and the optional addition of zucchini and carrots, these soft tacos are incredible topped with shredded cheese, a twist of lime, lettuce, and any of your other go-to taco toppings.

Looking for a dinner the entire family will eat – from baby to adult – that can be made in 15 minutes, in one pan, and includes hidden veggies?

I’ve got you.

We all need those no-brainer meals that come together fast and make everyone happy, and this one is hands-down a family favorite in our house. My kids keep it simple with cheese (obviously) and avocado, while I pile mine high with cilantro, diced onions, extra cheese, and—yes—more avocado.

And truly, I won’t stop you if you:

  • top it with black beans, sour cream, and salsa (love this for you)
  • sprinkle it with cheese and scoop it up with tortilla chips (sounds like heaven)
  • spoon it over a big salad with fresh veggies and rice (slay)

Because the veggies are cooked right into the dish, there’s no need to stress about making an extra vegetable side, especially when time is tight. Most nights, I serve these tacos with a quick side of microwaved black beans and some chopped fruit, because the clock is ticking and dinner needs to happen now. But you do you, boo.

And if—if—there are leftovers, they’re absolute gold. Toss them into a quesadilla, pile them onto nachos, add them to a salad, or save them for the easiest Friday night girl dinner ever. 🌮✨

Ingredients 

Soft Ground Chicken Tacos

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1/4 cup finely shredded carrots (optional)
  • 1/4 cup finely shredded zucchini, excess moisture squeezed out in towel (optional)
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp pepper
  • 1/4 cup water

Toppings

  • tortillas
  • shredded lettuce
  • shredded cheese
  • lime
  • avocado slices

Instructions 

  • Heat a large skillet over medium-high heat. Add in olive oil and let warm up. Add in ground chicken and let cook for 5-6 minutes or until just golden brown. Break the chicken up into small chunks.
  • Add in the shredded carrots and zucchini and let cook for an additional 2-3 minutes.
  • Add in all of the seasonings and the water.
  • Turn the heat to low. Stir everything together and then let simmer for 5 minutes or until the rest of dinner is ready to serve, stirring occasionally.

Notes

Age: 9-12 months serve deconstructed with age-appropriate sides
Toppings:
  • Serve with a side of brown rice, quinoa, or even Spanish rice
  • Top with diced avocado or creamy guacamole
  • Shredded lettuce
  • Halved or quartered cherry tomatoes
  • Sauteed green or red bell peppers and onions
  • Shredded Mexican blend cheese or cotija cheese
  • Pinto, black, or refried beans
  • Sour cream
  • Cilantro
  • Salsa
  • A squeeze of fresh lime juice
