My Kid’s Favorite Spinach Grilled Cheese
Crispy on the outside, melty on the inside, and packed with a creamy spinach spread, this Spinach Grilled Cheese is a fun upgrade to the classic. No big spinach pieces — just a smooth, kid-friendly filling that toddlers, kids, and adults will happily devour.

A few weeks ago, I was getting ready to make classic grilled cheese for my kids when my eleven-year-old looked at me dead in the eyes and said, “Didn’t these used to be green?” — as if I had personally wronged her.
And honestly? She wasn’t wrong.
Back when she was a toddler, I made grilled cheese on repeat — sometimes once, sometimes twice a week — and of course, I added spinach to them. I had that version down. But somewhere along the way, I completely forgot about it.
She, however, did not. And she made it very clear that plain grilled cheese was no longer acceptable.
So I grabbed a slightly sad bag of spinach and the last bit of cream cheese in the fridge and whipped up her favorite toddler-era version. And just like that, she devoured it in minutes — huge smile and all.
Here’s why we love this spinach grilled cheese so much:
⏰ It’s fast. This meal comes together in under 10 minutes — perfect for those moments when everyone goes from “not hungry” to hangry real fast.
🍃 It’s green (and proud of it). The spinach is blended right into the spread, so there are no big leafy pieces — just a smooth, creamy, bright green filling that kids actually enjoy.
❤️ It’s a favorite. Somehow, this version has always been just as loved (if not more) than classic grilled cheese in our house.
To make it, blend spinach, cream cheese, mustard, salt, and garlic powder into a smooth, creamy spread. Spread the mixture onto one or both slices of bread, layer on your favorite cheese (I love white cheddar here to keep that vibrant green color), and cook in a skillet until golden and melty.
This grilled cheese is a hit with everyone. My kids love it with a side of grapes or strawberries, and I usually eat mine piping hot over the counter while juggling dishes, helping with middle school math, and lunch prep for the next day — you know, classic mom life.
#mymomhack: When my kids were little, I mixed shredded cheese right into the spinach spread so it all stuck together (hello, less mess). Now? We’ve upgraded to sliced cheese for maximum #cheesepulls.
To the Kitchen, We Go —>






- Gather all of the ingredients.
- In a food processor, pulse the spinach, cream cheese and spices. You’ll get a thick pesto-like sauce.
- Assemble your grilled cheese. I spread some butter on the outside of my bread for extra crunch.
- Place the sandwich on a hot pan and cook until the cheese melts and the bread is golden brown.
- Serve and enjoy!

Ingredients
- 2 cups baby spinach
- 3 tbsp cream cheese
- 1/4 tsp Dijon mustard
- 1/8 tsp salt
- 1/8 tsp garlic powder
- 4 slices bread of choice
- 4 slices white cheddar cheese (see notes)
- 1 tbsp butter or mayo (optional)
Instructions
- In a food processor, add the spinach, cream cheese, Dijon mustard, salt, and garlic powder. Blitz for 30-45 seconds or until the spinach is broken down and smooth, scraping down the sides of the food processor if needed.
- Heat a medium skillet over medium-low heat.
- Spread the butter/mayo (if using) on one side of each piece of bread. Flip the bread over onto a cutting board.
- Spoon the spinach mixture on one or both sides of the bread. There will most likely be some leftover spinach cheese mixture for a later meal.
- Top one piece of bread with 1-2 slices of cheese, and then top with another piece of bread to make the sandwich.
- Place the sandwich on the preheated skillet and cook 2-3 minutes per side or until golden brown.
