With less then 2 weeks to go before baby #2 is due [how did that happen!!!] I thought we would take today to celebrate not only my new baby that is on the way but all of our babies, kiddos and each other. There have been so many big and little amazing moments over the past year in each of our lives and I think it is important to take a minute to acknowledge them, embrace them and celebrate! We have all come a long way. Having kids isn’t easy. There are days when you want to throw in the towel and be done with it all and then other days you are on cloud nine and couldn’t ever imagine your life any other way. 

Some days you lose your temper.

Some days you say things you don’t mean.

Some days you are not at your best.

But then….

Other days you superwomen and save the day at the last minute.

Other days you know just the right thing to say or give a hug at just the right moment to make everyone feel better.

Other days your heart, soul and love can stretch so far you think it could wrap the whole world into a big hug.

Today, we are going to celebrate it all. Everything you have done, not done and still want to do. 

It is all part of being you. A mom!

Take a big breath with me and know that you are not alone. However you feel, we have felt the same way. Whatever you did or didn’t do, we have been there as well. Whatever you wish you could have said, worried about, feared, we have also felt the same way. We are in this together.

Healthy Beet Pink Circus Animal Crackers

Icing
3 cups organic powdered sugar
5-6 tbsp organic milk of your choice
1/2-1 tsp beet juice [depending on how pink you want your cookies]
Fun sprinkles

Blend with mixer powdered sugar, 5 tbsp milk and beet juice. Add more milk to thin it out or more powdered sugar to thicken it, if needed. I would recommend a slightly thicker icing to cover the cookies with one dip. If it is being stubborn or gets too thin, put it in the fridge for a couple minutes to thicken it back up. 

Place cookies, a couple at a time, face up into the bowl of icing. Press down with fork until they are completely submerged and then fish out with a fork. Let drip for a couple of seconds and then let dry on wire rack or parchment paper. Sprinkle while still wet. 

Let dry and then enjoy.

They store best in an air-tight container in the fridge. Will last for 3-4 weeks.
