Let these easy tortilla pizzas be your lazy-smart mom’s guide to family pizza night – perfect for busy weeknights between after-school activities or one of those “I seriously have to cook again?” evenings.

In my house, I usually bust out tortilla pizzas when the kids’ schedules collide – one gets home late, the other leaves minutes later, and someone is gone most of the evening. These pizzas are clutch for saving my sanity during the drop-off/pick-up driving loops.

The best part? They’re incredibly easy. Simply top a tortilla with sauce, sprinkle on cheese, and add your favorite toppings.

But there’s one must-do step: pre-cook the tortilla before adding toppings.

Over the years, I’ve learned that skipping this step can lead to tortillas absorbing the sauce and turning soggy. And I, for one, do not like a soggy pizza crust.

Simply place the tortillas on a baking sheet and bake for 3–4 minutes. Remove from the oven, flip them over, and then add your toppings.

It’s a tiny step, but IMHO, it’s a total game changer.

Tortilla pizzas are also perfect for letting kids customize their own dinner. Set out toppings and let everyone build their favorite combo — dinner solved, minimal cleanup, and happy eaters all around.

A crispy tortilla topped with sauce, melty cheese, and favorite toppings turns into a quick, stress-free dinner everyone absolutely loves!

Ingredients 

  • 4 tortillas – can be small or large in size, and white, whole wheat, or gluten-free (corn tortillas are not recommended)
  • 1/2 cup pizza sauce, pasta sauce or pesto
  • 1/2 cup shredded cheese,  mozzarella or Italian blend cheese,
  • 1/3 cup toppings of your choice, chopped
  • 2 tsp parmesan, optional

Instructions 

  • Prep: preheat oven to 450° F. Line a baking sheet with parchment paper for easier cleanup. Place tortillas on a baking sheet.
  • Pre-Bake Tortillas: optional but highly recommended – for a crispier crust, place the tortillas in the oven for 3 minutes. Once out of the oven, flip over onto baking sheet.
  • Spread Sauce: spread the toasted tortillas with the sauce of your choice.
  • Add the Cheese: Next, sprinkle on your cheese, avoiding clumps.
  • Toppings: Scatter the toppings evenly on top of the cheese. Sprinkle with a pinch of parmesan.
  • Bake: Place the tortillas pizzas into the oven and bake for 6-8 minutes or until golden brown and the cheese is bubbling.
  • Done: Serve warm or set aside to come down to room temp for freezing.

  • Cheese: mozzarella, parmesan, provolone, cheddar, “jack” cheeses, feta
  • Meats: pepperoni, ground sausage, chicken, bacon crumbles
How to Store: Cooked tortilla pizza can be stored in the fridge for up to 4 days. Make sure to let them come down to room temperature before storing them in an airtight container or freezer bag. To reheat, pop them into the microwave for 30-second intervals until warm (my microwave takes 90 seconds). Or place them on a baking sheet and warm them in a preheated 350-degree F oven for 4-8 minutes. You can also heat them in an air-fryer for 3-4 minutes.

Expert Tips:
  • Less is more, when it comes to toppings. Putting on too many toppings, especially sauce or toppings with more water content, like tomatoes or pineapple, can create a soggy tortilla pizza that’s tricky to pick up and eat.
  • If you’re watching sodium content for toddlers and younger kids, use cheese like fresh mozzarella, fresh ricotta, and goat cheese, as they contain less sodium than some traditional cheeses, like parmesan or pecorino romano. You might also want to serve ham, sausage, and pepperoni sparingly for toddlers, as these meats can be saltier.
  • If you’ve got picky eaters, try setting up the toppings for these tortilla pizzas ‘buffet-style’ so that kids can make their own creation in a low-pressure setting.
  • Kids love to be creative and eat food that looks familiar – encourage them to use toppings to decorate their pizza with a smiley face, different shapes or letters, veggie rainbows, you name it!
