These mini pizzas English Muffin Pizzas are a great way to put together a healthy meal in no time at all! They take less than 10 minutes to make, are super customizable, easy to reheat for busy weeknights, and are a dinner dream come true for toddlers and kids.

Ingredients 

  • 3 English muffins, sliced in half
  • 1/2 cup pizza sauce, homemade, store-bought, pesto, etc.
  • 1 cup shredded cheese, mozzarella or Italian Blend
  • 1/2 cup toppings of choice, see below
  • 2 tbsp grated parmesan

Instructions 

  • Prep: preheat oven to 450° F. Line a baking sheet with parchment paper for easier cleanup.
  • Toast English Muffins: add the sliced English muffins to the baking sheet. For a crispier crust, place the English muffins in the oven for 3-4 minutes.
  • Spread Sauce: spread the toasted English muffins with the sauce of your choice.
  • Add the Cheese: Next, sprinkle on your cheese, avoiding clumps.
  • Toppings: Scatter the toppings evenly on top of the cheese. Sprinkle with a pinch of parmesan.
  • Bake: Place the English muffin pizzas into the oven and bake for 6-8 minutes or until golden brown and the cheese is bubbling.
  • Done: Serve warm or set aside to come down to room temp for freezing.

How to Store and Freeze
You can store cooked English Muffin Pizzas in the fridge for up to 5 days or freezer for 2 months. Make sure to let them come down to room temperature before storing them in an airtight container or freezer bag.
To reheat, simply pop them into the microwave for 30-second intervals until warm. Or place them on a baking sheet and warm them in a preheated 350-degree F oven for 5-7 minutes.
