Instructions
Preheat oven to 350 and grease a 9-inch round cake pan or loaf pan. I like to use 3 mini loaf pans, put different toppings in each, keep one out and put the other 2 in the freezer. But any pan works well with this cake.
In a medium bowl, gently combine yogurt, eggs, sugar, vanilla and oil. Add flour and baking powder and mix everything together but be careful not to over mix. Now is the time to add any other ingredients you wish! 1 to 2 containers of fresh fruit, dark chocolate chunks, nuts, cinnamon and sugar, etc.
Bake for 30-35 minutes or until a tooth pick comes out clean.
Let cool and enjoy together.
