These Cranberry Snowballs with Cashew + Coconut are a healthy holiday snack that will keep both big and little tummies happy!

Ingredients 

  • 10 dates
  • 1 cup raw cashews
  • 1/3 cup cashew butter
  • 1/2 cup coconut flakes
  • 1/2 cup dried cranberries
  • 1 - 2 Tablespoons of coconut flour

Instructions 

  • Place dates in small bowl and cover with water.  Allow to soak for 1 hour.  Drain water. If pitted, remove pits (this will be easy to do now).
  • In food processor, pulse raw cashews until the consistency of a chunky flour.  Add dates and pulse until well mixed.  Add cashew butter and pulse until well incorporated.  Soon, it will begin to reach the consistency of a wet dough.  Mix in 1/4 cup coconut flakes and dried cranberries.  Slowly add coconut flour until mixture reaches a desired consistency where it will hold a ball shape when rolled.
  • Using a small cookie dough scoop or spoon, begin to scoop dough and roll into balls by hand.  Place remaining 1/4 cup of coconut flakes into bowl and gently roll balls to cover in "snow".

Notes

Will store in air-tight container on counter or fridge for 1 week.
