4largeflour tortillas,regular, whole wheat or gluten-free
1/3cuppizza sauce,homemade or store bought
1cupshredded cheese,Mozzarella or Italian blend
1/3cuptoppings, pepperoni, chopped peppers, sliced olives, etc.
1tbspParmesan cheese(optional)

Instructions
Prep: Preheat a large skillet over medium heat.
Sauce: Place two tortillas on a large cutting board. Spread a thin layer of pizza sauce on one tortilla.
Assemble: Sprinkle a thin layer of cheese on top of the sauce. Add a layer of your preferred toppings. Sprinkle on another thin layer of cheese and a pinch of parmesan. Top with the other tortilla.
Cook: Add a little cooking spray or butter to the warmed skillet, if you prefer. Gently place the quesadilla on the warmed skillet and cook for 3-5 minutes on one side or until golden brown. Flip and cook for an additional 2-3 minutes. Transfer the cooked quesadilla to a cutting board and repeat with the other pizza quesadilla.
Eat: let cool slightly (those toppings will be hot) and slice into wedges, strips or chunks before serving.

How to Store and Freeze: You can store cooked pizza quesadillas in the fridge for up to 4 days. Make sure to let them come down to room temperature before storing them in an airtight container or freezer bag. To reheat, simply pop them into the microwave for 30-second intervals until warm (my microwave takes 90 seconds).
