blueberry and coconut granola for toddler and kids

Ingredients 

  • 2 cups old-fashioned rolled oats
  • 1/2 cup shredded coconut, sweetened or unsweetened
  • 1 1/2 cups almonds, sliced or slivered
  • 1/4 cup flax seeds
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey, agave syrup or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup dried blueberries

Instructions 

  • Heat oven to 300F. Spray baking sheet (you will need one baking sheet per batch) with olive oil or cooking spray.
  • In a large bowl, combine oats, coconut, almonds, flax seeds, oil, honey, cinnamon, vanilla and salt. Mix well. Spread mixture onto the baking sheet in an even layer.
  • Bake for 35-45 minutes, tossing and rotating pans every 15 minutes until golden brown. Take out of the oven and let cool in pan. If you want a chunkier granola, do not toss after you take out of the oven. If you want a looser granola, toss well and then let cool. Either way, let completely cool and then toss with dried blueberries.

Notes

Age: 1 year and up
Storage: Store in air-tight container. It will last 3-4 months.
