- 8 ounce sirloin beef, cubed
- 2 medium sweet potatoes, peeled and chopped
- 2 cups beef broth, low or no sodium recommended
- 1 tbsp fresh thyme, chopped
In a medium saucepan, bring the beef, sweet potatoes, thyme and broth to a boil over medium heat. Reduce heat to low and simmer for 25-35 minutes or beef is cooked through and sweet potatoes are tender. Let cool slightly.
Transfer all ingredients into a blender or food processor and puree, adding extra broth in 1/4 cup increments if needed, until you reach your desired consistency.
