Dark Chocolate Cherry + Almond Clusters are filled with sweet dried cherries, toasted almonds and crunchy rice cereal, then covered in a little too much chocolate (as if there is such a thing) and topped off with a sprinkle of sea salt!

Ingredients

  • 9 ounces dark chocolate chunks/chip
  • 1 cup brown rice crispy cereal gluten free or regular
  • 1/2 cup dried cherries roughly chopped
  • 1/2 cup almonds roughly chopped
  • 1/4 tsp sea salt

Instructions

  • Line 36 mini muffin cups with paper liners or place 36 mini muffin liners onto a baking sheet.
  • In a small pan over medium heat, toast the almonds for 5-7 minutes or until lightly browned, stirring freguently. Set aside and let cool completely.
  • Using a double broiler or microwave, melt chocolate. For microwave method, place chocolate in a medium microwave safe bowl and heat for 30 seconds at a time, stirring between times, until completely melted.
  • Add in the brown rice cereal, dried cherries and almonds and stir until combined.
  • Using 2 small spoons, scoop out a small amount and place into muffin liners. Spread evenly between 36 liners. Sprinkle each cluster with a pinch of sea salt.
  • Let cool completely at room temperature.
