These cute no bake Christmas cookies are a festive treat for the whole family! Easy to make, these reindeer cookies are made with Ritz crackers and a peanut butter filling, before being dipped in chocolate and decorated like Rudolph!

Ingredients 

Chocolate Cookies

  • 30 ritz crackers
  • 1/2 cup creamy peanut butter, not the natural kind
  • 1 cup chocolate chips
  • 2 tsp coconut oil

Reindeer Decorations

Instructions 

  • Prep: Line a baking sheet with parchment paper or a silicone mat.
  • Prep Crackers: place crackers in even rows on the baking sheet.

  • Add Peanut Butter: drop roughly 2-3 tsp of peanut butter onto each cracker. This doesn't have to look perfect.

  • Sandwich: Add on the top layer of crackers by gently pressing the top and bottom crackers together until the peanut butter moves to the edge but doesn't go over. You can also use a slight twisting motion to get the peanut butter where you want it.

  • Let Set: place the baking tray in the fridge or freeze and let set for 30 minutes to an hour.
  • Melt: place the chocolate and coconut oil in a microwave-safe bowl and heat in 30-second intervals, stirring until the chocolate is melted. Mine took 2 minutes until it was completely melted. Let cool slightly

  • Decorate: using a fork and spoon, or two spoons, dunk the cookies into the chocolate, making sure the cookie is completely covered. I like to use a fork and let the excess chocolate drip back into the bowl before placing the cookies back on the baking sheet. Repeat with half of the batch. Then decorate by adding the reindeer antlers, eyes and nose or simply add a pinch of sprinkles. You want to give the cookies a few minutes after their chocolate dunk to decorate or the items might slide around a bit. Repeat until all cookies are covered in chocolate and decorated.

  • Chill: place the baking sheet back into the fridge or freezer for 30 minutes to 1 hour to set.
  • Eat: serve and enjoy

Notes

Age: 1 year and up
Storage: once decorated, store in an air-tight container in the fridge for up to a week.
Crackers: you can use ritz or any other small round crackers you prefer. For a gluten-free version - use almond or gluten-free cracker you prefer. 
Peanut Butter: you will want to use the regular version of the peanut butter - NOT the natural peanut butter with the oil on top. I have found this is too oily and your crackers will not stick together. You could also use a thick style almond or seed butter.
