- 1 cup edamame, shelled
- 2 ripe avocados
- 1 lime, juiced
- salt to taste
- 1 tbsp cilantro, finely chopped (optional)
- 1 tbsp onion, minced (optional)
- 1 tsp jalapeño, minced (optional)
- Pinch cayenne pepper (optional)
In a food processor, pulse edamame and avocado until a chunky.
Add in the lime juice and salt and pulse until desired consistency.
Add in the optional ingredients (cilantro, onion, jalapeno and cayenne) in final step for a zesty variation.
Chill and serve with corn chips, crackers or your favorite cut-up veggies.
Age: 9 months and up (babies under 1, omit the salt)
Storage: store in an air-tight conatiner in the fridge for up to 5 days.
