Apple + Mint with Cottage Cheese Baby Food Puree

Filled with sweet apples, refreshing mint and chunky cottage cheese for a delicious meal for baby.

Ingredients

  • 4 apples, peeled, cored and roughly chopped
  • 1/2 cup water
  • 6 mint leaves
  • 1 cup organic full-fat cottage cheese

Instructions

  • In a medium saucepan, place the apples and water. Cover, and cook over medium heat for 10-15 minutes or unitl easily pricked with a fork, stirring occasionally. Let cool slightly.
  • Transfer the cooked apples to a blender or food processor. Add in the min leaves. Puree on high for 1-2 minutes or until you have reached your desired consistency, adding additional water in tablespoon increments if needed.
  • For a Stage 2 puree - add the cottage cheese to the blender and blend until smooth. For a Stage 3 Baby Food - pour the puree into a seperate medium sized bowl and gently stir in the cottage cheese.

Age: 6+ months
Yield: roughly 20 ounces
Notes on Consistency: for a Stage 2 puree - add the cottage cheese to the blender and blend until smooth. For a Stage 3 Baby Food - pour the puree into a seperate medium sized bowl and gently stir in the cottage cheese. 
Storage: Fridge – store in an airtight container in the fridge for 4 days. Freezer – I would not recommend freezing this puree as a chunky puree but you can freeze the apple and mint puree for up to 3 months. I have had success freezing the stage 2 smooth puree with cottage cheese in it though.
