In a medium saucepan, place the apples and water. Cover, and cook over medium heat for 10-15 minutes or unitl easily pricked with a fork, stirring occasionally. Let cool slightly.
Transfer the cooked apples to a blender or food processor. Add in the min leaves. Puree on high for 1-2 minutes or until you have reached your desired consistency, adding additional water in tablespoon increments if needed.
For a Stage 2 puree - add the cottage cheese to the blender and blend until smooth. For a Stage 3 Baby Food - pour the puree into a seperate medium sized bowl and gently stir in the cottage cheese.

Freezer – I would not recommend freezing this puree as a chunky puree but you can freeze the apple and mint puree for up to 3 months.
