Apple Cinnamon Muffins

January 11, 2016

apple muffin with a knife next to it.

These wholesome kid-friendly Apple Cinnamon Muffins are filled with whole wheat, fiber-rich apples, pecans, dried cranberries and heart-healthy olive oil. While I first made them for a healthy snack for the girls, they have quickly become our favorite go-to breakfast on crazy mornings. It's Muffin Monday peeps!! Who's excited?!?! Nah.. you didn't miss anything, there really is no such thing. But in my world, there should always be a warm pan of muffins sitting on your counter and ready to eat on the most dreadful day of the week - Monday morning. So glad we can agree on that! But I'm taking it back, the most dreadful morning is ANY morning where your baby/toddler/kid doesn't sleep through the night and instead thinks it's time for a 2 o'clock crib dance party (thanks but no thanks Parker) or needs you and only you to put socks on their feet in the middle of the night (really Ellie REALLY?!?). For us moms, dreadful mornings are probably happening more then ...

Mary Guest Post – Lemon + Thyme + Chia Seed Mini Muffin

February 13, 2014

I'm still fairly new to this whole parenting thing, but a good bit of it seems to be about embracing wholeheartedly the differences in how you might do things and how you were raised or others might think you *need* to do things. While there have been moments that I have stopped cold in my tracks realizing that I had just said something verbatim that I had heard my parents say a thousand times.  More often than not, I find myself sailing ahead in uncharted waters following a different star than my parents may have chosen. Growing up, I came from a home that bought cupcakes for school parties and on occasion would make an out-of-the-box treat, ala Betty Crocker, at home.  Peanut butter spread in the crevice of a piece of celery was a gourmet treat.  It may be perplexing to see the wide swinging of the generational parental pendulum when I choose to make the majority of our food from scratch and include ingredients du jour like chia seeds.  The important thing ...

Apricot + Coconut + Nutmeg + Flax Seed Mini Muffins

September 9, 2013

We decided to go camping last weekend with a group of friends and our toddler. We have been camping (really more of glamping) many times before the bebe was born but this was the first time we went as a family. And well, it was interesting. We left our one day camping adventure with one cut nose (babes), 4 hours of sleep (me), a leaking air mattress, contest to see who could get the dirtiest (babes) and 1 hangover (hubby). And as we drove off still smelling like campfire, we decided that yes, we did have a ton of fun. That decision I think came from complete exhaustion. Chasing a half crawling/half walking toddler around a camp site where there is nothing really for a toddler to do except get into trouble was more then exhausting - 'E, please stay out of the fire pit. E honey, let's not play with the fire ants. E, FREEZE, we don't walk out into the road like that. E, let's put the hatchet down and play with this, ummm, really exciting frisbee.' So against all better judgement, we ...
