Peach + Beets + Red Chard + Chick Peas + Cilantro + Black Lentils

On my last day working, well at least working at a job that actually pays, my girls took me out to lunch at one of my favorite Denver haunts. We sat outside soaking up the sun, eating, drinking and of course laughing at my crazy shenanigans a manager. Perfect day. During this lunch, we had this green salad that I just can't get out of my head. Obsessed. Straight up obsessed. Being obsessed about a salad, a salad, is just pure crazy. So now I fall into the crazy and obsessed category. Good thing I am now working from home. Was it the roasted beets paired with Apricot Chutney and Chick Peas? Maybe, but that combination has been the darling of salads at restaurants across the country for the past couple of years. Been there, done that. So maybe then, it was the crunchy black lentil noodles combined with cilantro and Raita? Unusual for sure. I usually find that while trying to get somewhere/anywhere, my play date, pool party or just going to the park, I forget all of the essentials. Sippy cups, snacks, sunblock, diapers (I swear I just loaded up the diaper bag, oh man). I am that mom, the one who is always asking to borrow something. Doesn't matter if it is from friends or strangers, I like everyone just the same. When packing snacks, I usually bring a couple chunks of cheese, maybe some Cheerios or crackers and if the babe is really lucky a banana. Then when she devores all of the snacks I brought by the time we have drove down the alley she gives me a look as if to say 'ok, that was lame but I ate it, so what else did you bring for me.' Then I end up buying some packaged food or kids meal wherever we end up, leaving me to wonder what she just ate and worrying that she will probably now never get into college because I just gave her a bag of chips for lunch. Carrot, Apricot + Quinoa with Curry Baby Food Puree

Last week was going to be my week. I was going to own it. There was going to be some some serious damage done to my forever growing to-do list, finally go live with my blog, make a stockpile of peach inspired food recipes, be free, work for myself, go for a run, hey maybe even get a pedicure at 1 in the afternoon while drinking a white wine spritzer. That was my plan.  The week before I had told my mom of my adventurous plan and she said [in her mom voice] 'hon, maybe you should just take your first week off of work and relax, regroup. Then the following week you can get back to it.' And like any child, I didn't listen.   So 3 days into my not-as-awesome-as-I-expected week I got hit by not one bug but by two. It got hot again. Summer isn’t over with me yet and I couldn’t be happier, except that the heat isn’t helping with the fact that I am stressing out in the inside. Heat on Heat. Not good for my internal system. Everything is changing in my life. I am leaving my corporate job to follow what I am truly passionate about [Cartwheels. Rainbows. Fist pump]. Having a single income, no health insurance and no certain future [Panic. Panic. Panic]. As much I know in my gut that this is the right path for me to take, it doesn’t make it any easier to leap off the cliff where there is not bottom in sight. Stressful, I know. I’m in my backyard which used to get a nice amount of shade from my neighbors trees until they cut them all down last week. The house and trees are gone. Just gone. Apricot + Cherries + Ginger

These two really shouldn’t be friends. Cherries and Apricots, I mean. They are just different sides of the same coin. One is loud, charismatic and vivacious the other is quiet, dry and a wallflower. The first one usually drives the second a bit crazy. I mean really, the cherry can be a bit annoying. It has parades, festivals and even songs dedicated to it, pies made with only it, there is even a town named after it. Big head. Big shot. The apricot is just not that high maintenance. It likes to play it cool. No fuss. No Muss. Until one day a crazy baby food lady gets inspired to toss them both onto a pan, crank up the heat in the oven to an almost unbearable sweltering level just to see what would happen.
