- Oats/Flour: you can make these pancakes by blending old-fashioned oats in a blender until you have homemade oat flour, or you can use all-purpose, white wheat flour, store-bought oat flour or a gluten-free one-for-one blend.
- Spinach: the star of the show – spinach! You will need a cup of fresh spinach for this recipe. Don’t pack in the spinach or your pancakes may become soggy in the middle. I have made this recipe with frozen spinach before (added it frozen to the blender), and while it works in a pinch, fresh spinach doesn’t have as strong of a spinach flavor and we preferred the taste of fresh spinach pancakes better.
- Banana: a medium banana with lots of brown spots works best for this recipe.
- Oil: you can use mild olive oil, coconut oil or melted butter in this recipe.
- Milk: you can use regular milk or a plant-based milk such as almond, hemp, soy, rice or oat milk.
- Egg: one large egg is needed to bind everything together.
- Spices, cinnamon, vanilla extract and salt: I love adding a pinch of cinnamon and vanilla extract to my spinach pancakes to really up the taste factor. But you can also omit these spices if you prefer. I also have a list below of other fun ingredients you can add to the pancakes if you are feeling fancy.
Add-Ins
You can make these easy pancakes as-is or add in a pinch of spices, finely chopped fruit or other fun add-ins. Here are a couple of my favorite additions:
- Cloves
- Pumpkin Spice Mix
- Nutmeg
- Strawberries (finely chopped)
- Blueberries (finely chopped)
- Peaches (finely chopped, towel-dried)
- Mini Chocolate Chips
- Chopped pecans or walnuts








Step-by-Step Instructions
There are a couple of ways you can make these delish pancakes!
Easy Spinach Blender Pancakes (the Original)
- Blend Oats: place the oats into the blender and blend into oat flour.
- Add Ingredients: add in the banana, spinach, egg, milk, oil, cinnamon and vanilla and blend on medium-high until completely smooth.
- Add Baking Powder: add in the baking powder and salt and blend on low.
- Cook: heat a medium skillet over medium heat, spray with cooking spray or add a little butter if needed. Drop 2-3 tablespoons of batter on the skillet and let cook for 3-4 minutes or until the sides are starting to become firm and the bottoms are golden brown. Flip and cook for another 2-3 minutes or until golden brown.
- Serve: let cool slightly and serve.
Fluffy Spinach Pancakes
- Flour: in a medium bowl, add flour (all-purpose, white whole wheat, store-bought oat flour or a gluten-free one-for-one blend).

Using Different Types of Flour
This recipe is absolutely fantastic (and beyond easy) using the original recipe, which calls for blending oats into flour and then adding in the rest of the ingredients. But I wanted to give readers a few other options in case you were out of oats or wanted a fluffier pancake.
Homemade Oat Flour Recipe: this is the original recipe for these pancakes and is made with oats that you blend into homemade oat flour. The result is an earthier pancake that is slightly flatter.
All-Purpose Flour Recipe: to get a fluffier pancake, you can use flour instead of homemade oat flour. All-purpose, white whole wheat or a gluten-free one-for-one blend, all work great in this recipe.
Store-Bought Oat Flour: if you still want to use oats but don’t want to make your own flour, you can use store-bought oat flour. Using store-bought oat flour will give slightly fluffier pancakes than the original recipe but not as fluffy as using other flours.

How to Serve These Spinach Pancakes
These pancakes are made to be easy, so don’t feel like you need to serve them with anything too complicated. Here are some of my favorite easy ways to serve them to your baby or toddler:
- BLW – cut in half and served for baby-led weaning
- Classic – cut into chunks and served with maple syrup and fresh berries
- Bagel & Hemp Sprinkles – Smear with whole fat cream cheese and sprinkle with hemp seeds (serve whole or in chunks)
- PB&J Sandwich – take one pancake and spread with your favorite jam, then take another pancake and spread with a nut or seed butter or your choice, press two pancakes together and serve as a sandwich. Great for preschool or school lunches.
- Dipping Fun – cut pancakes into long strips and serve with some yogurt (thinner yogurt works better for this recipe) to dip the pancakes in. Serve with a side of your favorite fruit, anything goes – chunks of banana, cut up berries, slices of cooked apples, etc.

Cooking with Kids
You can easily have your kids help you make these pancakes.
Toddlers
- Toddlers can help measure and pour the ingredients into the blender.
- They can help put the lid on the blender and push start. Note: make sure to talk about not touching the blender blade while making something in the blender, as it can be sharp.
Kids
- They can pick out and measure all of the ingredients and help to blend them. Note: make sure to talk about not touching the blender blade while making something in the blender, as it can be sharp.
- With adult supervision, kids can pour the batter into the skillet and flip the pancakes once they have cooked through.
Recipe Tips
- Size: these pancakes are supposed to be on the smaller size, so roughly 2-3 tablespoons of batter will make the perfect size for a baby or toddler. If made any bigger, they start to fall apart when flipped.
- Spinach: I prefer to use fresh spinach in these pancakes as they give a brighter green color and a fresher taste. If you only have frozen, I would recommend adding in half of the amount listed in the recipe card frozen right into the blender.
- Amount of Spinach: you DO NOT want to pack the spinach into the cup, or more spinach for that matter, to this recipe. Adding too much spinach will make the batter have more liquid in it causing the pancakes to become doughy in the middle when cooked.

Baby-Led Weaning Pancakes
These pancakes are perfect for baby-led weaning or as a finger food because they are soft to eat and your baby can easily pick them up in their hands for a palmar grasp or with their pincer grasp if they cut into smaller chunks. You can serve them to your baby sliced in half or cut into small chunks.
Spinach Pancakes for Toddler and Kids
These quick and easy pancakes are also great for toddlers and kids. You can serve them a smear of cream cheese or peanut butter, topped with yogurt and berries or the classic version with butter and maple syrup.
Storing and Freezing
These pancakes will store in an air-tight container for 3-4 days in the fridge. Pancakes also freeze well and will last up to one month in the freezer. To reheat, gently heat in the microwave or toaster.
Baby-Led Weaning Feeding Tips
- Serve and cut foods to help with grasp and minimize frustration – cut food into 2-3′ strips or sticks (about the size of 2 adult fingers) for babies 6-9 months old. You can shred or cut foods into pea-sized pieces once your baby reaches 9-12 months old to promote fine motor grasp.
- Have a plan for making clean-up easier, such as bibs that double as “food catchers,” a large mat underneath the highchair, a good vacuum, or a helpful dog! It might feel tempting to do so, but hold off on wiping your baby’s face and hands until the end of the meal. You might even consider taking your baby to the sink and letting them rinse their hands and face there afterward.
- Start setting up consistency and structure for meal times from the beginning. This can include when (timing) and where you offer foods, as well as providing a variety in what you offer. These will help your baby develop the foundation for recognizing hunger and fullness cues.

Easy Blender Spinach Pancakes (the Original)
- 1 cup old-fashioned oats, see notes
- 1 cup spinach, not packed
- 1 ripe banana
- 1 egg or flax egg
- 1/2 cup milk of choice, regular, coconut, almond, hemp, etc
- 2 tbsp coconut oil, olive oil or melted butter
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/4 tsp salt
Fluffy Spinach Pancakes
- 1 cup flour (see notes)
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 ripe banana
- 1 cup spinach, not packed
- 1/2 cup milk of choice, regular, coconut, almond, hemp, etc
- 2 tbsp coconut oil, olive oil or melted butter
- 1 large egg
- 1 tsp vanilla extract
Instructions
Easy Blender Spinach Pancakes (the Original)
- Blend Oats: In a blender, place the oats and pulse on medium speed for 30 seconds or until oats are a flour consistency.
- Add Ingredients: Add in the spinach, banana, egg, milk, oil, cinnamon and vanilla extract and blend on high for 30-60 seconds or until batter is completely smooth and the spinach is completely broken down, scraping down the sides of the blender if needed.
- Add in Baking Powder: Add in the baking powder and salt and blend on low for 20 seconds.
- Cook: Heat a non-stick pan or pancake griddle over medium to medium-low heat. Pour 2-3 tablespoons of batter onto the pan and cook for 2-3 minutes or until tiny bubbles appear on the outside of the pancake. Flip and cook for an additional 2 minutes. If batter gets too thick, add in a tablespoon at a time of milk and re-blend until you have the right consistency.
- Continue: Transfer pancakes to a cooling rack and repeat the process until you have used all of the batter.
- Serve and Enjoy!

- Mix: pour the wet ingredients into the dry ingredients and gently fold until incorporated.
- Cook: Heat a non-stick pan or pancake griddle over medium to medium-low heat. Pour 2-3 tablespoons of batter onto the pan and cook for 2-3 minutes or until tiny bubbles appear on the outside of the pancake. Flip and cook for an additional 2 minutes. If batter gets too thick, add in a tablespoon at a time of milk and re-blend until you have the right consistency.
- Continue: Transfer pancakes to a cooling rack and repeat the process until you have used all of the batter.
- Serve and Enjoy!

Hey, I’ve made this great recipe 3-4 times with success—for some reason this time my batter is a lot runnier and the pancakes won’t actually cook through! Any thoughts/help?
I haven’t had this happen with this recipe, but maybe let it sit for 5 minutes next time so the oats can absorb the liquid more. Or you could add in a few more tablespoons of oats to thicken it up. Let me know if it keeps happening.
Can any other veggie be subbed in here? These have become a staple in my house. Wondering if there’s anything else i can add/sub?

I had the same issue this morning and I’ve never had it happen before. I made a double batch and I think my bananas weren’t very big so I just added more oats and it was perfect.
I just can’t thank you enough for this awesome recipe. My daughter loves these pancakes! She’s somewhat of a picky eater and I’m praying she won’t get sick of them. I rotate as much as possible but these are ultimately her fave 🙂
Since I trust your recipes the most, would you say the outcome would be similar if I made them with grated zucchini instead? Would you drain the liquid? I love that you use oatmeal so I’d like to keep that in the recipe.
I always make double batches and freeze but would like your opinion before I attempt the zucchini kind.

I haven’t tried using zucchini, but I think if you blended up a batch of the pancakes without the spinach and then stirred in the drained zucchini (almost like what you do with zucchini bread), I think that might work. If you try it, let me know how it works!
I have just made these for the first time and they are fantastic! My 8 month old gobbled them all up in one go. The recipe is very simple, even for a baking novice like me! I used oat milk and found the consistency of the batter to be perfect. I have tried other baby led weaning recipes with limited success but not this one. I am so glad I stumbled across it and will be making them again.

These look great! Have you tried using oat cereal for the extra iron? Wondering if it would work instead of the oat flour!
I have not tried using oat cereal. I would think it could work, but you might need some extra liquid to thin it out more (oat cereal is pretty absorbent). Let me know if you try it and it works.
For the 1 cup the recipe calls for I use half cup gerber barley cereal and half cup gerber oatmeal and my baby loves it. Just have to cook it longer and it looks a bit more brown when cooked but great.

Yes, you can include small amounts of salt in baked goods to your baby. You can also leave the salt out but the flavors and storage will be slightly affected.
Could you use quinoa flakes instead of oats you think?
Hi – this was a great recipe – whole family including 11 month old and 3.5 year loved it! Quick question – could you make the batter 1-2 days ahead of time and keep in fridge until ready to eat? Sometimes the mornings can be tough and/or I don’t have the ingredients on-hand so trying to see if I could prep the actual batter and then make the pancakes fresh with my 3.5 year old (she loves to help) Also, not sure if you could freeze the batter and then use within a month? Thanks so much!
So glad your entire family loves this recipe. I get you on hectic mornings! I usually make a double batch of this recipes and ten freeze the pre-made pancakes. I haven’t tried storing the batter in the fridge. I think it would work but it would get thick and you would have to add more milk before blending and then making. If you try it, please update us on how it works.
This is probably a dumb question but we make these all the time. My toddler loves them. I make them ahead of the time usually so they are ready to go in the morning. Twice now I’ve made them, let them cool, put in airtight container, but then I forget to put them in the fridge. If they get left out overnight will they be bad the next morning? I’ve tossed 2 batches away, but before I toss batch number, 3 I though I’d ask.
If you added the salt in, they should be totally fine to put into the fridge the next morning (kinda like how you can leave muffins out on the counter). Hope this helps:)

Hi! I was wondering if you tried this with anything other than oats…my little guy is also allergic! (I’ve never known anyone to have this allergy until his test came back!) I’m thinking of just trying AP flour and testing it out but wanted to see if someone else did first!
Sorry to hear about your little guy’s oat allergy. I have not tried it with AP flour, but I bet it would work. Try it out and adjust with a little more or less milk depending on how thin/thick the batter is. Let us know how they turn out.

Hey there! I have had success replacing oat flour with Buckwheat flour!
I used about 1/3 cup of apple sauce instead of a banana and refrigerated the batter for 30 minutes before frying the pancakes and they turned out wonderful! My 2.5 loved these “monster green pancakes”

This recipe looks great! Was wondering, my LO has constipation issues and I’m trying to avoid bananas right now, as well as things like apple sauce , was wondering what else I could substitute for it??
I haven’t tried it without the banana, but I would start by using 3/4 cup of frozen cauliflower, frozen mango or peeled and chopped pear. Or you can use a combo on all three. I usually use one of those in smoothies when avoiding banana, so since we are blending these pancakes, I think the same replacements might work. Let us know if you try one and how it works.
My kids are allergic to eggs, have you tried any egg substitute for this recipie? Flax seed? Starch replacer?
I haven’t tried the flaxseed “egg” in this recipe, but have used it with success in most recipes I have tried it in. I would try that first.

I haven’t tried using rice cereal instead of oats. If you wanted to experiment, I would start with 1/2 the amount of rice cereal as oats and see how that absorbs the liquids. Let us know if you try it and how it works.

My little guy has been having these pancakes for 2, maybe 3 months now. At 10 months old he still loves them! I actually freeze the batch of pancakes for a quick breakfast prep.
I use SUPER ripe bananas for the added sweatness, coconut milk, and coconut oil.

I made this for myself since I didn’t know spinach pancakes was a thing and found it randomly! Also, didn’t realize this is for toddlers/kids until I read it all the way through. Just thought it was a good was for me and any person to have veggies in their pancakes. It turned out great! I didn’t have oats with me so I used regular all purpose flour, and I didn’t have eggs but had flaxseed meal so I used that instead. Thank you for this recipe! From now on, I’ll be adding spinach to my pancakes all the time!

Love this recipe! I’ve modified to add some more protein and fat by adding 1 tbsp peanut butter, 1 tsp of tahini, and omitted the cinnamon, let me tell you they smell like HEAVEN. Toddler and infant approved!

These are so great. My 3 year old and 9 month old love them. Even my husband is a big fan. They are so great for breakfast or a snack on the go. I’ve popped them into my sons lunch box, and given them to my 9 month on whilst we are out and about and I love that they’re not messy for him to eat. I now make more and freeze them and always make sure I have a stash to pull out for our rotation whenever we need.

I made this recipe for first time and was not sure how my kids would like them…BUT they were a HIT! As someone else mentioned they were very runny despite sitting for some time before cooking. Because of being runny they had to cook much longer than the 3 min’s per side. I’d def make them again but needs thickening up next time.

This recipe has a very small amount per pancake and is used for perserving the pancakes. But you can definitely leave it out if you prefer. I would just freeze any leftover pancakes instead of placing them in the fridge.
I only use Old-fashioned as I make my oatmeal from scratch never instant/bought from store. Again, yummy nonetheless.
Question: do you think you could put the batter in the oven in a mini-muffin tin? If so, what temp and timing would you recommend? Love this great recipe, and on a lazy hot day, wondering if I can avoid standing over the stove…..

I haven’t tried using frozen spinach in these pancakes, I would imagine they might make the pancakes a little bitter. But if you try it i would add in the blender frozen and when you add in the other ingredients. Let us know how they turn out if you try them.

I added a dash more milk, but do you know why this might have happened?

I don’t think there’s any other recipe i’ve made as many times as this one. its always a hit with my toddler, who isn’t always (ok, never is) enthusiastic about eating his leafy greens. he always finishes his plate if it’s these pancakes! thank you for this!!

Has anyone ever tried replacing the oat flour with almond flour or matzo meal in the vegan version of this?
I have made these many times and my kids love them but they always end up kind of raw on the inside. I always wait until there are multiple bubbles on top, I have tried varying the temperature and the size of the pancakes, I have tried making them thinner by adding more milk. Please let me know if you have any ideas. Thank you!
Hello! My 10 month old can’t get enough of these. I’m so happy because he doesn’t like veggies. He’s more meat and potatoes guy! I saw you used beets before. Do you cook the beets first or toss them in raw? My 3.5 year old loves beets so I am happy to buy them more often!

so good!! I’ve made a bunch of similar recipes but this is easiest by far and most consistent. added twice as much spinach (extra iron!) and omitted the vanilla (we’re out?!?) and still yummy! you can also make more savory with a bit of sautéed onion/garlic (still great for babies!)
remember to pair these with fruit high in vitamin c so the babes absorb the iron.

The original recipe is still in the recipe card but I did update and add another method to give a more consistent texture. I found that different blenders were giving some readers different outcomes on these pancakes. Now there are two amazing ways to make these:)
Made these exactly as written for my 8 month old this morning. They were so easy and turned out perfect!! He and I both gobbled them up!! This made quite a bit since I just did small mini pancakes, so plan to freeze those for later! Can’t wait to try some of your other recipes!!

I’ve made this recipe many times and it was very fluffy and well received. Had to use pear instead of banana since I was out of them. Have you tried making a sheet pan version to reduce the amount of time spent flipping pancakes? If so, any tips on how long and the temp to bake them at?

Making them into a sheet pan pancake is a brilliant idea! I haven’t tried it yet (but will this weekend) but I would recommend doubling the recipe and then baking at 425 for 15-18 minutes or until golden brown. If you try this, please let us know how it turns out.

Dino cookie molds from Amazon. Spray with cooking spray and lay on griddle. Takes some time to slide them off and flip, then freeze individually on cookie sheet, but well worth it to have on hand and have a meal the little ones are excited about and I can feel good to feed them.
Came out perfectly! I made it with blended oats and it came out perfectly. They girls eat them and the banana gives them a nice sweetness. 100% win in my book.

I’ve made the fluffy pancakes twice now. They turned out weird the first time (but my 12 month old still inhaled them!!). The second time, they turned out PERFECT! I have no idea what I did differently, but I was very pleased. These pancakes are his favorite food! And my picky 3 year old loves these as well. I’m so happy I found these, as it’s so difficult to find anything decent with him having allergies to wheat, soy, dairy, almonds, coconut…

My toddler loves these! I see you added a fluffy pancake recipe, but it looks exactly the same? Even the flour can be substituted for oat flour. Am I missing something?

Yes. I would double the batch, add the batter to a 9×13 sheet pan, and bake in a 425 oven for 15-18 minutes. Hope that helps!

Would a frozen banana work?
I have not tried to use a frozen banana in this recipe yet. But I would start by thawing it, discarding any excess juices, and then mashing it until smooth. Then mix in to the rest of the recipe. If you try it, please let us know how it works.
I’ve made the fluffy spinach pancakes a few times now and my 9 month old boy gets so excited and squeals with joy when he sees one on the plate for.his breakfast 😂 I’ve eaten a few as we’ll and they’re genuinely delicious
